Minko Tsurugi, often nicknamed Minchi, is a seventeen-year-old apprentice cook at Kissuiso and one of Ohana's most important foils. Single-minded in her dream of becoming a professional chef, she takes her kitchen work with deadly seriousness and has little patience for anyone she sees as a distraction. When Ohana arrives, Minko greets her with open hostility, muttering die at the newcomer she views as an unwelcome intrusion into her carefully ordered world.
Beneath the prickly exterior is a vulnerable and deeply earnest young woman. Minko nurses a quiet crush on Tohru Yoshino, the inn's talented young cook and her professional idol, which fuels both her dedication and her insecurity. Her tsundere temperament masks how hard she pushes herself and how much she fears not being good enough. As the series progresses, her rivalry with Ohana gradually thaws into a reluctant respect, and the two find common ground in their shared stubbornness and desire to prove themselves.
